When I placed the marinated green beans on the grill my “in-house taster” asked quizzically, “You’re going to grill green beans?!?” Heck, why not? Even the cookbook that had this recipe mentioned that although the end result of the beans wasn’t that attractive, it is one of the most flavorful ways to cook green beans.
Grilled Green Beans
The New Vegetarian Grill
1 pound green beans, ends trimmed
2 tablespoons toasted sesame oil
1 tablespoon soy sauce
1 tablespoon dry sherry or Chinese rice wine
2 garlic cloves, minced
1. Prepare a medium fire in the grill with lightly oiled vegetable rack in place.
2. Place beans in a shallow dish. Add the sesame oil, soy sauce, sherry and garlic. Toss to coat.
3. Lift the beans out of the marinade with tongs. Grill the beans, tossing frequently, until tender, and browned, 8 to 10 minutes.
4. Place the beans in a serving dish.Pour over any remaining marinade. Serve hot.
My in-house skeptic was pleasantly surprised at how good these came out. The saltiness of the soy sauce combined with the toasted vegetable oil complimented the fresh green beans. It’s a nice and easy way to prepare green beans in the summer.
