Some nights, the overwhelming desire to have a home cooked meal collides with me feeling too tired to cook. As a result, I’m often looking for quick preparation meals that satisfy my craving for home cooked food. These easy roasted potatoes fit this bill. They take only a few minutes to prepare and while they are cooking I can get other things done (or just sit on the couch and watch tv). Roasted potatoes also have another bonus: they smell really good while they are cooking.
Easy Roasted Potatoes
7 or 8 small yukon gold or red skinned potatoes
olive oil chopped or minced garlic
sea salt or kosher salt
variety of dried italian herbs (oregano, basil, parsley, etc.)
Preheat oven to 45 degrees.
Scrub potatoes and slice them into 1/4″ circles.
Place sliced potatoes in pyrex baking dish and try to keep them on one layer. Drizzle potatoes with olive oil, lots of garlic, salt and herbs. Stir potatoes to ensure both sides are evenly coated. Try to place potatoes in one layer as much as possible. Place potatoes in oven.
After about 20 minutes or so, flip potatoes over to ensure they are cooked evenly on both sides. Cook for another 20 minutes until desired doneness is achieved.
