Veggin’: The Adventures of a Vegetarian in a Meat-Eating World

Hi. I’m Megabeth. And I’m a vegetarian.

I began sliding into vegetarianism in 1999 with a complete commitment in 2000. Then, in 2008, I began a new adventure, I started receiving weekly deliveries from a local CSA (Community Supported Agriculture). Faced with the daunting task of cooking these vegetables 1) before they go bad and 2) in new and interesting ways, I wanted a way to keep track of what I got in each delivery and what I actually cooked with them. And, that’s how Veggin’ was born.

Chilled Avocado, Tomatillo and Cucumber Soup (1)I have been gleaning information from these internets for so many years that I figured it was time for me to give back. Veggin’ has become that vehicle for what I’ve cooked, when I cooked it, and reviews as to how I liked it. It’s all in an effort to not get into a cooking rut and to explore new tastes and ideas and share with others what I’ve discovered.

When I’m traveling I’m always on the lookout for restaurants that are vegetarian, vegan or simply just are thoughtful in their meatless selections. I try to post reviews of these establishments. I also do product reviews and articles about vegetarianism.

Finally, to keep things interesting, over the years I’ve put together some cooking series including:

There you have it.

It’s why I’m here.
