CSA Delivery #6 – July 7, 2009

July 08, 2009 By: Megabeth Category: CSA Delivery

I need to interrupt the special Tour de France programing to report on this week’s CSA delivery. Don’t fret, though. I’ll be back tomorrow with another French-themed recipe.

I was very excited when I opened this box because there was not one green onion. In fact, there were several new things in this box including lots of fruits – apricots, peaches and white plums. We also received some beets (which have since been put to good use), zucchini (also put to good use), and a cucumber. Finally, a nice little herb plant was also included in the mix. I need to do some research to figure out what it is…

Good stuff!

Mediterranean Layered Veggie Dip

June 01, 2009 By: Megabeth Category: Snacks/Appetizers

I learned the hard way that this is not a make ahead dish. More specifically, by making this dip the night before it was going to be consumed meant that while in the refrigerator the tomatoes and greek yogurt exuded a lot of liquid. As a result, this dip ended up being a little juicy albeit it was still delicious. However, if you are going to just make and serve it, it’s actually pretty durn good.

2 tablespoons fresh snipped chives
1 cup hummus
1 cucumber, peeled, seeded, and chopped

1/4 cup oil-cured or Greek-style olives, sliced
4 ounces feta cheese, crumbled
1/4 cup green onions, white and green parts, chopped
Fresh or dried oregano, for garnish

Mix the yogurt and chives together and spread in a 10-inch glass pie-plate.

March 03, 2009 By: Megabeth Category: Salads

This recipe continues the theme of looking for summer in the dead of winter. This cucumber salad is light and refreshing. It tastes great served with the tomato and parsley salad.

Exotic Greens with Kiwi-Honey Vinaigrette

January 26, 2009 By: Megabeth Category: Salads

This recipe was featured in the Valentine’s Day suggestions in Vegetarian Entertaining by Vegetarian Times. The kiwi-honey vinaigrette brought a hint of summer in the dark cold winter. It’s pretty thick so a little bit of the dressing goes a long way.
