Exotic Greens with Kiwi-Honey Vinaigrette

This recipe was featured in the Valentine’s Day suggestions in Vegetarian Entertaining by Vegetarian Times. The kiwi-honey vinaigrette brought a hint of summer in the dark cold winter. It’s pretty thick so a little bit of the dressing goes a long way.

Exotic Greens with Kiwi-Honey Vinaigrette
Vegetarian Times: Vegetarian Entertaining

Dressing
2 kiwi fruits, peeled and coarsely chopped
3 T canola oil
2 T red wine vinegar or apple cider vinegar
1 T honey
1/4 t salt
1/4 t white pepper

Salad
8 ounces mixed gourmet greens, such as radicchio, endive, romaine, or red leaf lettuce
8 cherry tomatoes, halved
1/2 cucumber, sliced (peeled if waxed)
1 large carrot, peeled and shredded

To make the dressing, combine all dressing ingredients in a blender or food processor fitted with a steel blade and process until smooth, about 5 to 10 seconds.

Pour into a serving container and refrigerate until ready to use.

Grammy’s Salad Dressing

With the delivery of butter lettuce in this week’s CSA delivery, it was a natural choice to make homemade salad dressing. This is my Grammy’s Salad Dressing…it’s quick and easy to make.

Grammy’s Salad Dressing
From my mother’s recipe box

2/3 cup oil (I used olive oil)
1/3 cup vinegar (I used balsalmic vinegar and added a bit more to make it more “vinegary”)
1/4 teaspoon dried mustard
1/4 teaspoon sugar
1/8 teaspoon pepper
1/4 teaspoongarlic power
1/4 teaspoon basil
1/8 teaspoon oregano
3 tablespoons lemon juice

Place all ingredient in jar and shake well.
